St Aubin

HISTORY

Located along the undulating slopes of southern Mauritius, the fields of Saint Aubin have been under sugar cane cultivation since 1819.  The estate takes its name from one of its first owners, Pierre de Saint Aubin since 1778.

Le Domaine de Saint Aubin belongs to the Guimbeau family native of France, established in Mauritius for eight generations now.  Jean Baptiste Guimbeau was the first to settle in Mauritius in 1793. La Rhumerie du Domaine de Saint Aubin distinguishes itself as the one where Mauritius’ very first agricultural rum was created, wholly from pure sugar cane juice.

LA MAISON DU RHUM DE SAINT AUBIN

Always in search of lasting quality, the artisanal distillery of Groupe Saint Aubin has brilliantly met the challenge of combining innovation with tradition. It advocates for the protection of the environment in the production of authentic agricultural rum equally appreciated by connoisseurs and amateurs.

Our “white” rum is made from specially selected cane sugar. The first pressed juice is distilled in a traditional pot still.  Only the heart of the ‘coeur de chauffe’ is used to provide you with rum of exceptional quality.  Spices and natural tropical flavours are mixed successfully with our white rum to bring additional flavours.

LE CHAIS DE SAINT AUBIN

For ageing, we put raw alcohol in barrels. The inside of these barrels was previously burned or toasted thus releasing a multitude of aromas retained in the wood.

We also use old and new barrels containing other alcohols such as whisky, brandy or cognac.  Our barrels come from Scotland, South Africa and France.  Each barrel is unique and will provide an exclusive rum.

It is to be noted that rum, or any alcohol put in barrel will age twice faster under tropical climate. A rum which has aged 10 years in a oak barrel in Mauritius equates to a 20 years aged rum from Europe.

LA RHUMERIE DU DOMAINE DE SAINT AUBIN

In order to meet demand, Groupe Saint Aubin established a new traditional distillery with a copper column to increase its high quality agricultural rum production capacity without forgetting fruit based liqueurs.

With the distillation of the sugar cane juice in this column a delicate and light rum is produced.  This agricultural rum allows excellent miscibility lending itself perfectly well to the making of various cocktails.
